# How to Make It:

01 - Bring a medium pot of water to a boil. Cook ramen noodles according to package instructions without the seasoning packets. Drain, reserving 60 milliliters of cooking water, and set noodles aside.
02 - Whisk together eggs, grated Parmesan, heavy cream, and black pepper in a mixing bowl until smooth.
03 - In a large skillet over medium heat, cook diced bacon or pancetta until crispy. Remove from skillet, leaving 1 tablespoon of rendered fat in the pan. If omitting meat, add butter instead.
04 - Add butter and minced garlic to the skillet. Sauté for 30 seconds until fragrant.
05 - Add cooked ramen noodles to the skillet and toss thoroughly to coat them in the garlic butter mixture.
06 - Remove skillet from heat. Immediately pour the egg and cheese mixture over the noodles, tossing quickly to form a creamy sauce. Add reserved cooking water one tablespoon at a time if the sauce requires loosening.
07 - Stir in crispy bacon or pancetta if using. Season with salt to taste.
08 - Plate immediately and garnish with additional Parmesan cheese and fresh parsley if desired.
