# How to Make It:

01 - Dissolve yeast in warm milk with a pinch of sugar; let stand 5 minutes until foamy.
02 - Whisk in sugar, eggs, melted butter, vanilla extract, and salt. Gradually incorporate flour until a soft dough forms.
03 - Knead the dough on a lightly floured surface for 5 to 7 minutes until smooth and elastic; place in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
04 - Roll dough to 1/2-inch thickness and cut into 2-inch rounds. Re-roll scraps as needed.
05 - Arrange rounds on parchment-lined trays, cover, and let rise for 20 minutes.
06 - Heat oil to 350°F in a deep fryer or heavy pot; fry beignets in batches for 2 to 3 minutes per side until golden. Drain on paper towels and cool.
