# How to Make It:

01 - Set the oven temperature to 325 degrees Fahrenheit (165 degrees Celsius).
02 - Heat olive oil in a large Dutch oven over medium-high heat. Brown beef cubes in batches for 2 to 3 minutes per side. Transfer browned meat to a plate.
03 - Add unsalted butter to the same pot. Stir in sliced onions and cook over medium heat, stirring frequently, until deeply caramelized and golden brown, approximately 25 minutes.
04 - Add minced garlic and sliced carrots to the caramelized onions, cooking for 2 minutes until fragrant.
05 - Pour in dry white wine, scraping the bottom of the pot to loosen browned bits. Simmer for 3 minutes to reduce slightly.
06 - Incorporate beef broth, Worcestershire sauce, fresh thyme, bay leaves, kosher salt, and black pepper into the pot. Return the browned beef to the mixture.
07 - Cover the pot and place it in the preheated oven. Bake for 2 hours or until the beef is fork-tender.
08 - Simultaneously, arrange bread cubes on a baking sheet and toast in the oven at 325 degrees Fahrenheit (165 degrees Celsius) for 10 to 12 minutes until golden and crisp. Set aside.
09 - Remove pot from oven and discard bay leaves. Transfer beef and caramelized onions to a 3–4 quart casserole dish.
10 - Evenly layer toasted bread cubes over the beef and onion mixture. Sprinkle shredded Gruyère cheese on top.
11 - Return the uncovered casserole dish to the oven preheated to 375 degrees Fahrenheit (190 degrees Celsius). Bake for 15 to 20 minutes until cheese is melted and bubbling.
12 - Allow the dish to rest for 5 minutes before serving. Garnish with additional thyme if desired.
