# What You'll Need:

01 - 2 boneless, skinless chicken breasts

# How to Make It:

03 - Brush corn with 1 teaspoon olive oil. Grill, turning occasionally, until kernels are lightly charred, about 8–10 minutes. Cut kernels off the cob. If using frozen corn, sauté in a skillet until lightly browned.
04 - In a bowl, toss grilled corn with ½ teaspoon ground cumin, pinch of cayenne pepper, 1 tablespoon chopped cilantro, and juice of ½ lime.
05 - Whisk together ½ cup Greek yogurt, juice of ½ lime, 1 tablespoon olive oil, honey if using, salt, pepper, and garlic powder until smooth.
06 - Divide 2 cups chopped lettuce or spinach between two bowls. Top each with sliced chicken, seasoned corn mixture, cherry tomatoes, diced red onion, and chopped bell pepper.
07 - Drizzle bowls with Greek yogurt dressing. Sprinkle with crumbled cheese and fresh herbs. Serve with lime wedges.
