05 - Portion the dough evenly into three parts; leave one plain, tint one with red gel food coloring and the other with green until colors are uniform.
06 - Roll each dough portion between sheets of parchment paper into 9 by 6 inch rectangles to uniform thickness; chill for 20 minutes.
07 - Layer the dough rectangles with the plain on bottom, red in the middle, and green on top; trim edges to align precisely.
08 - Roll tightly from the long side into a log, removing parchment as you proceed; optionally roll in colored sanding sugar for decoration.
09 - Wrap the log in plastic wrap and refrigerate for at least 2 hours until firm.
10 - Heat oven to 350°F and line baking sheets with parchment paper.
11 - Cut the chilled log into 1/4-inch rounds and place on baking sheets spaced 2 inches apart.
