# How to Make It:
01 - Preheat oven to 350°F and lightly grease a 12-cup muffin tin or line with paper liners. In a small bowl, combine ground flaxseed and water, stir well, and set aside for 5 minutes until thickened.

03 - In another bowl, whisk together almond milk, maple syrup, melted coconut oil, vanilla extract, and the prepared flax egg until fully incorporated.
04 - Pour wet ingredients into the dry ingredient mixture and stir until well combined with no dry pockets remaining.
05 - Gently fold diced apples and optional walnuts or raisins into the batter until evenly distributed.
06 - Divide mixture evenly among the 12 muffin cups, pressing down gently with the back of a spoon to compact slightly.
07 - Bake for 25 to 28 minutes until the tops are firm and golden brown.
