02 - 2 large eggs

07 - ¼ cup grated Parmesan cheese (30 g)
08 - 2 tbsp fresh parsley, chopped

12 - 2 tbsp olive oil

# How to Make It:

01 - Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture thoroughly.
02 - In a large bowl, mix shredded chicken, eggs, dried zucchini, spring onions, garlic, almond flour, Parmesan, parsley, salt, pepper, and smoked paprika until well blended.
03 - Warm 1 tablespoon olive oil in a large nonstick skillet over medium heat.
04 - Scoop approximately ¼ cup of mixture per fritter into the skillet, flatten gently with a spatula, and cook for 3 to 4 minutes per side until golden and cooked through. Add remaining oil as needed and cook in batches.
05 - Place cooked fritters on a paper towel-lined plate. Serve immediately, garnished with extra parsley or a dollop of Greek yogurt if desired.
