- Vegetables: 1 red bell pepper sliced, 1 yellow bell pepper sliced, 1 medium carrot julienned, 150 g (5 oz) broccoli florets, 100 g (3.5 oz) snap peas trimmed, 3 spring onions sliced, 2 cloves garlic minced, 1 tbsp fresh ginger grated
- Spicy Sauce: 3 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp sriracha (or to taste), 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp sesame oil, 2 tbsp water
- Garnish: 1 tbsp sesame seeds, Fresh cilantro chopped (optional)
Instructions
- Step 1:
- In a bowl toss the chicken with 2 tbsp soy sauce and cornstarch Set aside to marinate for 10 minutes

- In a small bowl whisk together all spicy sauce ingredients Set aside

- Heat 1 tbsp vegetable oil in a large wok or skillet over high heat Add the marinated chicken and stir-fry for 34 minutes until just cooked through Remove and set aside
- Step 4:
- In the same wok add a splash of oil if needed Stir-fry garlic and ginger for 30 seconds until fragrant
- Step 5:
- Add bell peppers carrot broccoli and snap peas Stir-fry for 34 minutes until vegetables are crisp-tender
- Step 6:
- Return the chicken to the wok Add the spicy sauce and spring onions Stir-fry everything together for 23 minutes allowing the sauce to thicken and coat the ingredients
- Step 7:
- Transfer to plates garnish with sesame seeds and fresh cilantro if desired Serve immediately
