A refreshing and colorful frozen treat featuring creamy yogurt, sweet-tart pomegranate seeds, and crunchy pistachios—perfect for a healthy snack or light dessert.

I first made this yogurt bark for a family movie night. Everyone loved customizing their own toppings and watching the bark set in the freezer. Now it is one of our go-to treats for warm afternoons or party platters.

Ingredients

  • Plain Greek yogurt: 2 cups (500 g) full-fat or low-fat
  • Honey or maple syrup: 3 tablespoons
  • Pure vanilla extract: 1 teaspoon
  • Pomegranate seeds (arils): 1/2 cup (80 g)
  • Shelled pistachios: 1/3 cup (40 g) roughly chopped
  • Unsweetened coconut flakes (optional): 2 tablespoons

Instructions

Prepare baking sheet:
Line a baking sheet (approx. 9x13 inches) with parchment paper
Mix yogurt base:
In a medium bowl mix Greek yogurt, honey or maple syrup and vanilla extract until smooth
Spread yogurt:
Spread the yogurt mixture evenly over the prepared baking sheet about 1/4 inch thick
Add toppings:
Sprinkle pomegranate seeds chopped pistachios and coconut flakes evenly over the yogurt
Press toppings:
Gently press the toppings into the yogurt with the back of a spoon
Freeze:
Freeze uncovered for at least 3 hours or until completely firm
Serve:
Remove from freezer break into pieces serve immediately or store in an airtight container in the freezer
